The SMOKE Washing Device is a wet-scrubbing exhaust treatment unit engineered for professional kitchens using charcoal grills, wood-fired ovens, and other solid-fuel cooking methods that generate heavy, spark-laden smoke beyond the capacity of standard dry filtration systems.

Wet Scrubbing for Heavy Smoke and Spark Suppression

The SMOKE device is the appropriate solution when charcoal, wood, or other solid fuels produce exhaust with high soot, ash, and live spark content that would rapidly foul or ignite conventional dry filter systems. By washing the exhaust air with pressurized water, the SMOKE unit captures heavy particulates, cools the air stream, and eliminates the ignition risk posed by sparks and embers — protecting both the filtration equipment downstream and the ductwork itself.

Water Scrubbing Process and Closed-Loop Water Management

Exhaust air laden with soot, ash, and smoke enters the SMOKE device from the kitchen hood. The water washing stage captures large particulates, extinguishes any live sparks or flame fragments in the airstream, and substantially reduces the visible opacity of the exhaust — air that enters the unit visibly black exits significantly lighter in color after treatment.

The unit operates across a flow range of 3,000 to 10,000 m³/h and uses an internal circulation pump to continuously recycle wash water rather than consuming it from the mains supply. Water lost to evaporation and carry-off is automatically replenished via solenoid-controlled valves triggered by the water level sensor, keeping mains water consumption to a minimum. By removing the heaviest contamination at the first stage, the SMOKE device also extends the service life of any downstream dry filters.

Three-Stage Filtration Process

The SMOKE unit processes exhaust air through three sequential filtration stages:

  • Pre-filter: Captures large particulates in the first stage.
  • Oil Filter: Traps oil and similar particulates not precipitated during the washing process.
  • Droplet Filter: Retains moisture remaining in the air stream after washing.

This sequential approach protects each filtration stage from being overloaded by the contamination that the previous stage is designed to capture, extending total filter service life and maintaining consistent device performance over time.

BMS Integration and KITCHEN System Compatibility

The SMOKE device supports integration with building automation systems, enabling remote monitoring, status feedback, and coordinated start/stop control with the kitchen exhaust fan. When deployed alongside the KITCHEN Ecology Unit, both products function as a fully integrated exhaust treatment system — combining wet scrubbing with dry filtration to provide a complete, code-compliant ventilation solution for solid-fuel cooking applications.
